In 2009, the Cuvée Spéciale was created : old vine clairette. This new cuvee was born from the harvesting of pink clairette grapes coming from old vines between 80 and 100 years old, planted amongst Grenache noir vines. The yield is miniscule - 800 litres on average - for this very exclusive cuvee. But this wine, which benefits from a long maturation of 24 months in new demi-muids, will be best kept for a long period. This is why it will be sold to a privileged few in magnum only… This exceptional wine should evolve and develop aromas of truffles and wild fennel. Its freshness and remarkable minerality will be able to stand up to creamy sauces, oily fish, poultry, creamy desserts or cheese.
